This Slow Cooker Orange and Ginger Beef Stew is a comforting twist on Calgary Ginger Beef and about the most satisfying stew you can imagine! Succulent, tender beef in a rich gravy with subtle notes of orange and ginger in the background.
Ginger Beef is a uniquely Canadian comfort food classic, that I discovered during my time in Canada.
True to my food-loving-self, one of the first things I did when I arrived in Canadawas to check the food magazines section of about every seller I came across. Naturally.
And I was so happy to see so muchdiversity! They have Canadian recipe magazines, American ones and because I live in Quebec, Quebecois and French ones too. OH MY!
And all the recipes and produces used are in season! I think I've been distorted by Australia on this one (check this post to understand why) but it feels great!
Anyway, picking just one or two was difficult. I obviously wanted to take them all.
I finally settled on two Canadian Living specials, including one featuring 93 easy slow-cooker recipes. See what happened in my head? Canada = cold = slow-cooker = comforting.
And I was right! This Slow Cooker Ginger Beef was the first recipe I tried and it was 1. delicious 2. very comforting. Thank you Canadian Living!
A few notes aboutthis Ginger Beef Stew recipe:
The orange and ginger flavors are not too empowering, which is great. They just add a nice touch to the melt-in-your-mouth meat. So if you're new to this combination of flavors, don't be afraid to give it a try.
I think it's really important to use reduced sodium soy sauce and stock because it might be too salty otherwise. That's why I recommend adding some salt only in the end if needed.
Cilantro and scallions really complete this ginger beef stew, so don't skip them. Other than that, the recipe ispretty straight-forward! Enjoy 🙂

Ingredients
- 2lbsboneless beef pot roast / stew beef900 g
- 1onionchopped
- 2cloves garlic minced
- 2tbspfresh gingerpeeled and minced
- 2tbsporange marmalade
- 1tbspcoconut sugar or packed brown sugar
- 1tbspfive-spice powderalso know as Chinese five-spice
- 1tbsporange zest
- ½cuporange juiceabout 2 fresh oranges
- 2tbspsalt-reduced soy sauceomitted because I didn't have any - tamari for GF
- 1cupsodium-reduced beef broth
- 4cupsbaby bok choy, cored and chopped200 g, 7 oz
- 2tbspcornstarch
- 3scallionssliced
- ½cupfresh cilantro leavestorn
- salt and pepper to taste
Instructions
If you didn't buy pre-cut meat, start by trimming any excess fat from beef and cut into cubes.
In a large slow-cooker (this is the one I use), combine beef, onion, garlic, ginger, orange marmalade, sugar, five-spice, orange zest, orange juice, soy sauce,and broth. Season lightly with salt and pepper.
Cover and cook on low for 6 to 8 hours, or until beef is tender.
Whisk cornstarch with 2 tbsp water and stir into slow cooker. Stir in bok choy.
Cover and cook on high for about 15 minutes or until sauce has thickened and boy choy is wilted. Taste and adjust salt and pepper if needed.
Serve over rice and top with scallions and cilantro.
Recipe Notes

I'm trying this recipe right now, however on stove top instead of the slow cooker. My home smells Amazing! I browned my beef chunks and cooking on low for 2.5 hours on low.

I love Ginger Beef and this is a great healthy twist on it! This slow cooker version is quite a bit lighter than the fried Calgary Ginger Beef I am used to! Love it!

Could I use the slowcooker for amounts twice this recipe, or would it take then too long to get on a simmering point.......?
I of course could use - instead of the slowcooker - a normal pan in the oven.....
